Rice Noodle Soup
Method:
Small dry rice noodles
You soak them in warm water for 20 minutes until they're a little soft. So when you're cooking them in hot water, it's going to take you literally 30 seconds. Until it's a little soft…. We're going to add our baby bok choy and bean sprouts, and we're basically going to blanch it.
Put noodles in for 30 seconds. Basically, it's up to you. If you wanted really wilted, you could cook it for longer, but if you want it a little crunch still in the vegetable then cook it for a little less time. You're going to see it wilted down a little bit.
Start layering – start with a layer of cooked rice noodles, then the baby bok choy, shredded chicken and scallions.
A little cilantro and fried garlic.
For a little kick - Could also add a few drops of pickle vinegar – serrano pepper with white vinegar kept in the fridge overnight.
Fish sauce – from oriental foods in Norwalk or soy sauce.
Topped off with a little Thai chili.
Add in a little chicken broth.
