Food Fight: Villa Maria Pizzeria in Bethpage

Villa Maria Vodka Sauce Recipe ala Chef Michael Goldsborough
Yield approx 1.5 qts
Ingredients:
1 medium onion, diced
4 cloves garlic, chopped
1/4 cup prosciutto, minced
1 cup decent quality vodka
1 qt homemade marina sauce or your favorite store bought.
1.5 cups heavy cream
1/4 to 1/2 cup grated parmesan cheese
Salt and pepper
Instructions:
-Over medium to high heat in a 3qt saucepot add a tablespoon of oil.
-When hot, add onions, garlic and prosciutto. Sautee until prosciutto is crisp and onion/garlic have browned. Turn down heat if necessary.
-Remove the pot from the flame and add vodka. Return to flame but be careful vodka may ignite.
-Reduce vodka by half then add sauce and cream.
-Cook out for 15 to 20 minutes then add parmesan cheese, salt and pepper to taste.
-Vodka sauce can be cooled down and refrigerated for 3 to 4 days.
