What's Cooking: Uncle Giuseppe's Marketplace's chicken vodka and pepperoni stuffed garlic knots

Chef Vinny Olivieri, of Uncle Giuseppe's Marketplace, shows News 12's Lily Stolzberg how to make chicken vodka and pepperoni stuffed garlic knots.

Ingredients:

1 ½ lb. pizza dough
1 pint Olive oil
¼ cup garlic (chopped)
2 tbs parsley (chopped)
3 tbs. pecorino romano
2 chicken cutlets (breaded and fried)
½ cup vodka sauce
½ lb. fresh mozzarella (cut in to 12 slices)
36 slices peperoni

Directions:

  1. Gently flatten the pizza dough into a square making sure not to over stretch.
  2. Cut the dough into 12 even pieces.
  3. Form the knots and place on a sheet pan.
  4. Bake at 450 degrees for about 20 minutes.
  5. While the knots are cooking, place the oil, garlic and parsley in a large bowl and mix until all are fully incorporated and set aside.
  6. Cut each chicken cutlet into six equal squares and set aside.
  7. Once the knots are fully cooked add the hot knots to the bowl with the oil mixture.
  8. Mix well making sure that the knots are fully coated with the garlic and oil mixture.
  9. Sprinkle the knots with the pecorino and mix again making sure that the cheese gets fully incorporated.
  10. Open the knots by making a horizontal cut making sure not to cut all the way through and place on a pan.
  11. Begin building by placing a teaspoon of vodka sauce on the bottom cut side of each knot.
  12. Place a piece of chicken on top of the sauce.
  13. Place another teaspoon of sauce on top of each piece of chicken.
  14. Place a piece of mozzarella on top of the sauce.
  15. Lastly place three slices of pepperoni on top of each slice of cheese.
  16. Place the tray back in the oven and cook at 450 degrees for about one minute or until the cheese melts.
  17. Remove from oven and garnish with the excess garlic oil mixture.
