Xavior Armstrong says one day he’s going to own a restaurant.
For now, he is serving up lunch at JAC Shack.
JAC Shack, open on Fridays, is fully operated by seventh graders at Jefferson Academic Center - from the host to the chef - they’ve got it covered.
“I think so many of them have the potential to thrive in the culinary world," says Chef Brook Herritt, culinary instructor at Jefferson Academic Center.
Herritt created this unique program to immerse children in the culinary arts.
They spend the first half of the year gearing up to serve actual customers in the spring. Every week the menu changes, and there are cultural lessons that coincide with the mouth-watering entrees.
